Reading Test
Task 1. Read the text "Food and Rstaurants". Do you like eating out? Check out these reviews of the trendiest places to eat and improve your reading skills.
Food and restaurants
Are you looking for somewhere special to go this weekend? Do you want to try something new? Check out one of these hot new restaurants.
Last Days of the Raj
A centrally located Indian restaurant, perfect for eating before or after the cinema or a show. In summer enjoy your meal in the beautiful garden. The most popular dishes are lamb and chicken cooked with mild, medium or hot spices. For brave customers there is extra hot!
A Taste of Tuscany
Whether you’d like a great value-for-money lunch or a relaxed evening meal in stylish surroundings, this is the place for you. The chefs have all been trained in Italy and they make both traditional and contemporary dishes. We recommend the pasta and seafood.
Your Local Caff
Remember when cafés served full English breakfasts – sausages, beans, fried bread, bacon and eggs – with a strong cup of tea? Well, this place still does and you can have your breakfast at any time you like during the day while you listen to your favourite tunes from the 1980s.
The Lemon Tree
This pretty restaurant serves healthy food that’s tasty too. Come in for a vegetarian snack at lunchtime or a great fruit smoothie or a cappuccino and a delicious piece of cake in the afternoon. Food is bought from local producers whenever possible.
Cheesy Bites
A restaurant that only serves cheese, but hundreds of cheeses from many countries and in lots of different forms. They serve reasonably priced lunches but dinner can be expensive. Lovely food and a very elegant dining room, looking onto an amazing flower garden.
Fast Best
Fast food doesn’t have to be junk food, as this café proves. Do you fancy a really good hamburger made with the best ingredients, or old-fashioned fish and chips fried to perfection, all on the table in super-quick time? Speed and quality are important here, and the prices aren’t bad either.
The Chocolate Box
The owner of this small café used to cook all kinds of food, but then she realised she preferred desserts to anything else. If you want meat or fish, don’t come here. They only do desserts! Lots of different kinds of sweets. Chocolate lovers will be excited by the range of chocolate cakes.
Musical Chairs
Have you noticed how music improves the taste of your food? This new restaurant has different types of live music every night except Sundays, and excellent food to go with it. Great fish dishes, steak and pizza. Monday is classic rock night, so see you there!

Banquets have hit the event mainstream again. The nation’s love of good food, good drink and a glamorous atmosphere has lead to this indulgent communal feast dominating the events sector.
And with good reason! Banquets are popular because they effortlessly give an event a focus, whether it’s a party, a ceremony or a dinner dance. The act of sitting and dining brings people together to feast and chinwag, offering somewhere relaxed and natural for people to network at ease.

Sarah: Ooo, this is so exciting. So, where do you want to get married? I know, I know, I know. Um, up in the mountains. You know, that beautiful waterfall? Why don't we get married by the waterfall?
Ronald: Uh, I don't know.
Sarah: Oh, come on. It would be great. It's so beautiful, and it's peaceful, and it's really romantic. Come on.
Ronald: I don't know. You know I'm allergic to 32 types of wild flowers . . .
Sarah: You'll be okay. Take an allergy pill.
Ronald: . . . and I might break out in a terrible rash.
Sarah: You'll be okay. Come on. Well, let's . . . . I'm sure we can come up with something nice. Come on. Let's think about it.
Ronald: Wh . . wh . . . wh . . . We could get married in my parent's backyard. [ What? ] Yeah. We just need to move the dogs for a few hours.
Sarah: No! Don't even think about it. Their backyard is really tra . . . tra (She means to say, trashy). It's . . . it's in bad shape. And their house is like, right next to the freeway. It's only half a block from the freeway. It's so noisy. Come on. There is a real nice reception hall only a couple miles away. We can do that. You don't have to worry about your allergies.
Ronald: Ah, that sounds expensive!
Sarah: It's not that expensive . . . just a little bit. And then, and then, look. We can have a catering service come, and they serve shrimp and lobster tails, and when my friend got married, they had the best desserts. Come on, and then, you know, for our breakfast, our wedding breakfast, we could go to that Japanese restaurant . . . I can't remember. What's it called?
Ronald: You mean, Samarai Sushi?
Sarah: Yeah, Samuri Sushi! Their food is so good. Come on, come on.
Ronald: That sounds so expensive.
Sarah: But it's okay. It's worth it. Come on, Ron! Come on!
Ronald: How about my mother's tuna fish sandwiches instead?
Sarah: Ronald. We can spend a little bit more money than what you keep in that old stupid jar on your desk. Come on.
Ronald:Well, I was trying to save money for the honeymoon.
Sarah: Well, yeah. [ Yeah. ] Well, okay. Well, I've been thinking about too. I've been thinking about it for weeks.
Ronald: Me too. Now look, look at this Web site. We could go to Salt Lake City, Utah.
Sarah: That would be so cool! They have the best snowboarding and skiing, and their snow. It is the best snow. This time of year would be perfect. They have some really, really nice hotels. Oh, Ron, we're going to love that. That would be wonderful. I love skiing.
Ronald: I . . I . . . I was thinking about visiting some of the local art and natural history museums instead. [ What? ] Snow skiing just isn't my thing.
Sarah: Oh, Ron. Come on.
Ronald: You . . . you know. I don't do well in the cold.
Sarah: Brother!
Ronald: Oh, yeah! [ What? ] That's a good idea. Let me call my brother. [ No way!] He lives there, and he probably could let us stay at his house.
Sarah: For our honeymoon!?!?!
Ronald: Oh, yeah! [ No! ] Wait, wait! Where are you going? Come back. Did I say anything wrong?

6 Different Types of Catering Services.
Provision
of food for an event is as essential as the event itself. However, for a
first-time planner, choosing the type of catering that fits your event can be a
daunting task. With the wide variety of food options, it can be a little tough
to choose effectively.
Here
are the six different types of catering:
1. Corporate Catering
Corporate
catering depends on the size and level of the function being hosted. Corporate
functions may range from small gatherings to fancy dinners. These require a
specific type of structure when catering for them. Some companies would prefer
a small open bar for its residents while others will opt for a small foods
tasting session.
Corporate
functions are elegant and very relaxed and should be catered for with regard to
this fact. Hiring a wedding caterer for your corporate function might prove
wasteful and will eventually reflect on your expenses.
2. Wedding Catering
Wedding
catering is one of the most common forms of large-scale catering. One of the
most critical aspects of a wedding is the reception, which mainly focuses on
the food offered to guests. Weddings can be tricky since you may never be able
to accurately estimate the number of people to be present during the wedding.
The
menu should reflect the diversity of the invited guests with a view to catering
to different tastes. Aside from the food and the wine, the caterer is also in
charge of table settings and displays, which vary for different functions. When
sourcing for a caterer, get one with experience in wedding catering.
3. Social Event Catering
Retirement
parties, birthdays, baby and bridal showers always call for celebration. These
functions are more intimate and demand attention to detail, especially when it
comes to catering. Due to their small nature, always make an effort to
service clients’ specific dietary needs. Attention to people’s allergens should
be noted to avoid cases of inflamed allergies arising from food intake.
Also,
cultural beliefs should be considered to avoid the chance of providing
prohibited foods during such gatherings. Additional options, aside from the
food, such as the theme colour of the event, should also be factored. Compared
to weddings and other large gatherings, small social events do not require a
large presence of on-site staff. This is done to emphasize the intimate nature
of such gatherings.
4. Concession Catering
Public
events, major sporting events, and large music concerts fall into this
category. Wherever you find large crowds of people gathered, chances are there
is food on site. In such cases, only provide the most popular foods since it is
difficult to cater to everyone’s specific dietary needs. For instance, it makes
sense to have popular fast food bars instead of full course food options.
Since
most of the caterers at these events work as vendors, their goal is to make the
most out of an event, which means providing the most popular and unique foods
to attract as many customers as possible to their stalls. While planning for
such events can be a nightmare, with the right menu choices, you can make a
fortune while at the same time ensuring everyone is happy and well fed.
5. Food Truck Catering
This
is a highly popular catering option for small outdoor functions or functions
with many food vendors. They do not require a large staff. Two or four are
enough to facilitate the preparation of food and serve people, which is mainly
done through a window. Food selection can range from the very simple to fancy
depending on a customer’s needs and the nature of the event. This type of
catering works well for casual outdoor events in a garden setting where the
crowd is not too big as to overwhelm the caterers.
6. Restaurant Catering
If
you are hosting an event and would like a more advanced menu than the usual,
restaurant catering is the way to go. For instance, if your event is being held
within a hotel’s premises, using one of the hotel’s recommended restaurant
caterers is highly advised. You might even get such a catering service as a
package, which will save you the hustle of planning for all the intricate
details. Some restaurants also provide outside catering should you want the
same services at a different location. The caterers might also provide table
dressing services if you wish to make the event beautiful and immersive.
Understanding
the different types of catering services helps you make an informed decision
whenchoosing a caterer for your gathering. The food provided at the event
is as important as the event itself since it brings people together, and since
people have varying tastes and dietary needs, aligning the menu with this in
mind will make for an unforgettable event.
BANQUETS AND OUTDOOR CATERING.
Banquets and Outdoor catering
A banquet is a FOOD AND BEVERAGE service at a specific time and place, to a given number of people, to an agreed menu and price. Banquets are special functions for social professional and state occasions.
EXAMPLES
SOCIAL OCCASIONS: Wedding Receptions, Birthday Parties, Cocktail parties, New Year parties etc.
PROFFESIONAL EVENTS: Conferences, Convention, Training programs, Board meetings etc.
STATE AFFAIRS: State banquets, Diplomatic cocktails and dinners etc.
Banqueting is a business of selling space to hold functions. Banquets require large halls with kitchens to provide quantity foods, Banquet halls are found in large hotels where banquet business is part of the overall revenue strategy
Banquet organization structure
Banquet manager.
Banquet Sales Coordinator Banquet Secretary
Banquet Supervisor Banquet Sommelier
Waiters Waiters
Casual Staff Casual Staff
Following are the principal members of banquets:
Banquet Manager is the overall in charge of meeting banquet sales targets, developing banquet business, customer contact, banquet administration and supervising all arrangements.
Banquet Sales coordinator prepares sales kits, fact sheets layouts and proposed menus, visits potential guests to solicit business, conducts FAM tours of facility
Banquet Menu
The Banquet Sales coordinator coordinates with the Chef to prepare a choice of two table d’hôte menus or give suggestions for a buffet. This makes it convenient for the customer who is always looking for suggestions, and the chef who plan meals keeping in mind factors such as availability of raw material, cost and preparation times. Atypical table d’hôte menu would include
APPETISER
SOUP
ENTRÉE
VEGETABLE
SWEET DISH
COFFEE

Подача меню та прейскурантів.
Hello, my dear students!
This exercise is for restaurant service staff. It will help you to communicate better in English. A customer wants some information from you. Choose the most natural-sounding response:
1. Check yourself. Do the quiz:
2. Follow the link, watch a restaurant training video and make notes.
3. Read and translate the information.
Do you know that great customer service is essential to your success? How do you deliver excellent customer service at restaurant? First, let’s define it: customer service is the assistance and advice you provide to your diners. Customer service is equal parts communication and genuine attention to your diners. When guests visit your restaurant, you want them to feel welcome. When you treat them with care and respect while providing an excellent meal, they’ll come back to your restaurant again and again. Customer satisfaction has a massive impact on your revenue. We’re going to discuss five ways to deliver excellent customer service at restaurant.
1. Do It Right From the Start
While food quality is incredibly important, it is the experience diners have from the minute they walk in the door to the minute they exit that counts. Restaurants should remember to keep the customer’s needs at the forefront of every dining experience. Here are a few tips for accomplishing this:
Speak Appropriately
· Greet your diners the minute they walk in the door.
· Use respectful titles – sir, ma’am and miss work well.
· Don’t interrupt.
· Listen intently and pay attention to what they want.
· Be thoroughly versed on your menu. Ask questions and repeat their orders to make sure you get it right.
Etiquette Matters
While the etiquette often depends on the restaurant type, proper etiquette may be maintained in pizza parlors as well as fine-dining restaurants.
· Who do you serve first? If there’s a guest of honor, serve them. If not, begin with the women, then men, then children.
· Serve and clear food from the diner’s left. If you have to reach in or interrupt, be polite.
· Serve, pour and refill drinks from the right.
· When serving food, have a system so you know which plates go to which diner. Don’t call out entrées if possible.
· Never make diners feel like you want them to leave. The server’s tip is not more important than the diners’ comfort.
· Don’t make your diners ask for the check. Clear plates, bring the check and process it in a timely manner.
2. Don’t Make Them Wait
If your diners have to wait too long for their first round of drinks, appetizer or meal, it really won’t matter to them that your bartender makes the best martini or the chef prepared the best steak. Your diner is already irritated and hungry.
You can call this the negative turning point. Remember that it can be hard to win back your disappointed customer. Avoid disappointing them at all costs. Make sure you have enough staff on hand so they never have to wait too long. If your diner orders a meal that takes a bit longer to cook, let them know in advance. Be forthcoming and informative.
Your goal is to accommodate your diners with exactly the same quality food and service every day and at every time of day.
A happy customer is one whose problem was solved quickly and satisfactorily.
3. Fix Problems Immediately
Your third step in delivering excellent customer service is your finesse at dealing with customer problems and complaints. No matter how hard you try, something is going to go amiss some time or another. Whatever the problem, your goal is to please the customer.
It is vitally important that you deal with problems immediately. Don’t let your customer’s anger linger while waiting to work his way up the management chain. Here are a few tips for dealing with customer problems:
· Listen intently to their problem without interrupting.
· Own the mistake. Acknowledge that, yes, there is a problem. Let them know you are very sorry.
· Stay calm, especially if you don’t agree with your customer.
· Maintain eye contact and watch your body language. Make sure your body isn’t telling a different story than your words.
· Ask your customer what they’d like. Try to negotiate a solution that is acceptable to both of you.
· Always empathize, don’t blame.
· Apologize again!
· Solve the problem quickly and without drama.
4. Use Customer Comment Cards
Show your diners you value their opinion. Exceptionally effective restaurants want their customer’s opinions – the good, the bad and the in-between.
When you give them the opportunity to leave a comment, you show them that you care and are always looking for ways to improve your food and your service. Your customer’s comments can help you learn about areas that need improvement. The comments can also show you where you are excelling. You’ll see what your customers see and in the end be able to provide them even better service.
You’ll build better customer relationships and enhance your restaurant at the same time.
5. Incorporate Technology
Offer Free Wi-Fi
Games at the Table. Parents of young children are often exhausted after a long day at work. Give the parents a break while occupying their children. Consider handheld gaming devices at the table, a TV/media room for kids (and the old stand-by – coloring books).
4. Read and translate.

Let's sum up the information.
So, the most common restaurant service standards are:
- Greeting the guests well.
- Seating them at the desired table or the bar or waiting area if there is a wait time.
- Presenting the guests with a menu and wait for a few minutes before going over for the order.
- Assisting the customer in placing an order by explaining the dishes (if asked), and repeating the order to ensure no mistakes in order taking.
- Ensuring that the order is served to the customer as soon as it is prepared and minimizing the time delay between placing the order and serving it.
- Delivering the food at the table, and serving it to the customers, if needed as per your restaurant’s service standards.
- Checking to see if the food is alright, or if the customers wish to order more at intervals.
- Clearing off the table only once the customers are done with their meal or drink.
- Reducing delay while billing.
- Asking for feedback about the service.
- Ensuring hospitality even after the customer has paid the bill and is about to leave.
Use this Customer Service Checklist to ensure that you
maintain optimum restaurant service and deliver a great guest
experience to your customers.

Тема. Порядок та правила складання меню та прейскурантів.
Dear pupils!!! Welcome to our lesson of professional English.
Read and translate (make notes into your copybook)the article then use the information to compose your own menu or price list.
What's the first thing your customers see and the last thing they consult before they order?
It's not a complicated riddle. If you said the restaurant menu, you're absolutely correct: the restaurant menu is your restaurant's most important marketing material.
So, today we are going to learn menu and price list planning. Menu planning is a learned skill improved through practice. Effective menus are critical to the financial health of a foodservice operation and serve as a “driver” of the business. Their importance to a successful foodservice operation can not be overstated.
MENU PLANNING PRINCIPLES AND FACTORS TO CONSIDER:
Menu planning principles include:
balance,
nutritional quality,
aesthetics, and variety, including color, texture, flavors, shapes and sizes of food. The equipment and personnel available to produce and serve the menu are also important considerations in planning the menu. Along with all of these considerations, the effective foodservice manager also has to consider costs, production and other management issues.
Factors affecting menu planning can be organized into two main areas: customer satisfaction and management decisions.
Four factors related to customer satisfaction include sociocultural background, food habits and preferences, nutritional influence, and aesthetics.
So, to plan a good menu you need to consider the following factors:
· food cost and budgetary goals of the foodservice operation
· production capability, including available equipment and personnel
· type of service and food delivery system
· availability of foods
· the philosophy of the business and foodservice operation
SUGGESTED STEPS IN MENU PLANNING
· Once it’s time to actually plan the menu, the conventional wisdom is to start with a menu pattern that fits your operation and then work through breakfast, then lunch, then dinner.
For instance, if you are planning a lunch menu, will you have soups, salads, sandwiches, pizzas, full platters, sides, desserts, and beverages. How many selections will you offer in each of your chosen menu categories? Will you have daily specials? Are there any other special options you might want to offer your customer?
· Once you establish your menu categories, it is recommended to plan main entrees (platters) first, then the sides that go with the entrees. Other entrees, such as sandwiches and entrée salads are planned next, followed by soups, appetizers, additional sides, and any planned daily specials. Desserts and beverages finish off the categories. This sequence of working through the menu categories helps make sure the most expensive dishes are chosen first so the lower priced items can better fit in the plan and complement the choices offered.
· Typically the more limited the menu choices, the easier it is to control costs, so it’s not surprising that many successful operations serve only pizza and a few Italian selections while others specialize in burgers and fries, or even just ice cream and frozen treats with a few sandwiches.
· The menu planner can consider factors such as cross-utilization of products, balance, variety, customer preferences and trends, as well as all those management factors for the entire menu mix.

outlet wants to cater for, keeping in mind the type of clientle. The
main advantage of a well-planned menu is that it leads to
consumer satisfaction. It also helps to motivate the employees for a
responsible and successful service.
A successful
menu depends upon composition the right combination of foods,
prepared perfectly, to the entire satisfaction of the customer.
MENU
In a
restaurant, a menu is the list of dishes to be served or available
for a dinner to select from. The items that are available for the
diner to choose from are broken down into various categories, depending on
the time of day or the event.
The
compilation of a menu is the most important part of a caterer's work. It
is regarded as an art, acquired only through experience and study. The
menu is a link between the guest and the establishment, hence it should be
carefully planned by the
establishment's professionals, namely the
executive chef, the food and beverage manager and the food and beverage
controller.

Types
of Menu
So, let’s continue our work…
Do You
Know Types of Menu?
Task 1. Look at this video and get general information about types and
classification of menu.
So, there
are many types of menus. But in reality all are fallen into 2 categories which
means there are in fact 2 major types of menu. They are: The Table D ’ Hôte Menu The à la Carte Menu.
TYPES
OF MENU
In
a restaurant, there are two different types of menus which are
differentiated by the manner in which they are served and priced. A
menu may be a la carte or table d'hôte.
A
La Carte Menu
An
“A La Carte Menu”, is a multiple choice menu, with each dish
priced separately. If a guest wishes to place an order, an a la carte
is offered, from which one can choose the items one wants to eat. Traditionally,
the original menus that offered consumers choices were
prepared on a small chalkboard, a la carte in French; so
foods chosen from a bill of fare are described as à la carte, "according
to the board."
In
an a la carte menu all items are cooked to order including the
sauces that are made with wine, cream or mustard. Depending on
the dish chosen by the guest, the cooking time will vary. It is necessary
to inform the guests about the time the preparation might take.
An extensive a la carte menu is impressive but involves a huge amount
of mise-en-place.
Table
D'hôte
Table
d'hôte is a French phrase which literally means "host's table".
It is used to indicate a fixed menu where multi-course meals with
limited choices are charged at a fixed price. Such a menu may also
be called prix fixe ("fixed price"). It usually includes three or
five courses meal available at a fixed price. It is also
referred to as a fixed menu. Because the menu is set, the cutlery on
the table may also already be set for all of the courses, with the
first course cutlery on the outside, working in towards the plate as the
courses progress.
